Hold the stick still and move the knife, running the length of the edge from the heel to the tip down the length of the stick, then turning over the knife and running the opposite side of the blade towards the handle of the stick. Repeat till you can feel the burr along the entire length of the cutting edge. Give it a few very light strokes pulling the edges away from the ceramic to deburr. Finishing the edge with a paddle strop loaded with polishing compound can bring out the best edge.
